Get back to basics with these deliciously simple after-school snack inspired smoothie recipesEven though I’ve been out of post-secondary school for over six years now, I still get a sense of anxiety on Labour Day. I actually have to sit down and remind myself that I’m just going to work tomorrow at my regular old job, not spending thousands of dollars on textbooks I’ll never use again, missing the bus because it was too crowded and walking in late for my first class, and reviewing the course syllabus only to see a presentation on there worth 50 per cent of my grade (which pretty much means FAIL to someone who has a fear of public speaking).

Going back to grade school each September was no different. Summer was over, I didn’t know if my friends were in my class or not and if the teacher was going to be nice or mean, and I didn’t know if what I was wearing was considered “cool” or not until I saw what everyone else was wearing (so Nike sneakers and Adidas tear-away pants are out, and platform sandals and black flares are in? Okay then…).

Ugh — school was a stressful time for this overly anxious and introverted kid.

The only good part about going back to school in September meant getting back into my after-school routine, which included snacking on apple slices dipped in peanut butter, late summer fruit from the trees in our backyard with ice cream or whipped cream and Sugar Crisp (don’t judge), and cheese and crackers while watching Recess, The Magic School Bus, Saved By The Bell, Family Matters, Breaker High, Friends and Are You Afraid of the Dark, in that order, until it was time for dinner.

Those were the days.

And that’s why when Vega reached out to me to see if I’d be interested in creating my own back-to-basics, back-to-routine delicious simple smoothie with a base of Vega One and Silk, I tried to come up something inspired by my favourite after-school snacks: late summer fruit, peanut butter, and comforting carbs in the form of oatmeal instead of Sugar Crisp and crackers.

For this challenge, Vega sent me a tub of their Vega One French Vanilla all-in-one nutritional shake plus several single-serving pouches of their Mocha and Coconut Almond flavour — which was awesome because I was almost out from the last time I stocked up on Vega at Blogfest — and a container of Silk Unsweetened Almond milk to use in my simple smoothie. I’ve been drinking Silk for years now since I can’t handle much dairy (I love their Unsweetened Coconut Almond blend for mixing up into my morning protein pancake and their Unsweetened Soy for cereal and oatmeal — and the fact that Silk has as much calcium as dairy milk, is an excellent source of vitamin D and has absolutely no added sugar), so I was more than happy to accept the simple smoothie challenge to see what I could do with a base of Vega One and Silk!

Vega One has been my smoothie booster of choice for years now, and not just because it’s packed full of 20 grams of plant-based protein for all my muscle-building needs: it also contains a blend of greens, plant-based vitamins and minerals, 25 per cent of your daily recommended intake of fibre, Omega-3s, antioxidants and 1 billion CFU probiotics. Even though all that goodness is packed into a single scoop, I still add in spinach, maca, parsley, chia seeds and other nutritional boosters that only ruin the flavour and consistency most of the time, yet I still drink it… because who wastes a Vega smoothie??

So here’s what I came up with. They are definitely delicious, and much more nutritious than a bowl of Sugar Crisp. Now excuse me while I blend up a smoothie and watch reruns of Friends on Netflix for the next three hours like the responsible adult I am.

Ingredients

    Directions

      1. Toss all the ingredients in a blender and blend until smooth.
      2. Pour smoothie mix into a mason jar and sprinkle with oats.
      3. Place smoothie near natural light and take a photo.

          3. Place smoothie next to leftover plums, sprinkle some oats around and take a photo.
